Instructions:
1) Step#1: MARINATING FISH METHOD: First, combine potato starch, black pepper, Shaoxing, five spice powder and the oyster sauce into a bowl. Add fish chunks and allow it to marinate.
2) Step#2: MAKING CHOW MEIN STIR-FRY SAUCE METHOD: Add oyster sauce, soy sauce and water into a bowl and mix it well.
3) Step#3: COOKING SHRIMPS CHOW MEIN: Put a skillet or wok on medium/high heat (gauge 6). Allow pan to get hot for one minute. After that, add cooking oil, and then the marinating fish chunks. Let fish chunks fry cook on one side for one between two minutes, or until it browns. Flip it and brown the other side for 1 minutes. After that, add the mashed garlic and stir fry for 10 seconds. Add the carrot and stir fry for 10 to 20 seconds.
4) Next, add chopped bok choy, noodles, and then the chow mein sauce. (Note: if noodles are stucking mix in about 1 to 2 tablespoons extra water more in the chow mein sauce. Use the pan’s lid cover it and allow steaming until noodles come apart.) If noodles are not sticking on each other continue. Stir fry for one between two minutes, or until the bok choy is cooked properly, and the noodles are coated with sauce evenly. Stir in diced scallion and then finished. Fish chunks Chow Mein is best served right after cooking it.
